Ingredients

  • 1,1 liter water
  • 300 gram flower
  • 200 ml vinegar
  • 100 gram salt
  • 50 gram cornstarch
  • 50 gram gelling sugar (=sugar + pectine and citric acid) (you can buy this in a supermarket Dutch name 'geleisuiker')
  • 1,5 spoon honey

costs: voor under €4,00 you can make about 3 liter paste.

Preparation

Put 1 liter cold water and 200 milliliter white vinegar into a heavy cooking pot. Add 300 gram of white bread flour.

Mix well. Bring to the boil stirring continuously until the mixture thickens. For best results, use a blitzer type food mixer rather than stirring.

Mix 50 grams of corn-flour and 100 milliliter of cold water in a separate container. Add this to the thick, hot mixture and continue cooking until the paste thickens even more. Add 50 gram gelling sugar, 1.5 tablespoonful of honey and and 100 grams of salt and continue cooking. The sugar is the bonding agent, the pectin in the gelling sugar helps form the thick, viscous, aqueous solution required upon cooling and also has a preservative property. The honey is a deodorant and also serves together with the salt to prevent he growth of many bacteria. Cook for an another minute then remove from the heat.

Preserve

While still very hot, pour into sterile containers with lids excluding all air from the filled container. Snap on the lid closed or use as soon as it is cold.
